This is one of my very favorite sneaky healthy meals to make for my family! They are so juicy and delicious, and have a whole serving of veggies built right in! Add a tasty side of curried sweet potatoes, and you have a killer weeknight dinner! I found the original recipe here, and tweaked it a bit until it worked for us!
To start, you will need:
For the Burgers:
- Ground Turkey (I use the tube you can get in the frozen section)
- 8-10 baby carrots, or 2-3 whole carrots
- 1 small head of broccoli, chopped finely
- 1/2 bunch of cilantro, finely chopped
- 1/4 cup soy sauce
- 1/4 cup lime juice
- 1/4 cup water (optional)
- 1/3 cup chunky peanut butter
- 1 Tbsp Chopped garlic
- 1 tsp minced ginger
- 1 tsp honey**
** only use the honey if you are using an all natural peanut butter without sweeteners.
For the Potatoes:
- 1 Large Sweet Potato
- 1tsp Curry Powder
- 1 tsp chopped garlic
- 1.5 Tbsp coconut oil (or whatever oil you have)
- Salt and pepper to taste
Defrost your turkey (if you are using frozen). Again, if you are like me and just getting prepared an hour before dinner time, pop that baby in a bowl of room temp water and it will thaw up in no time 🙂
While that is thawing, go ahead and get started on your sauce. Combine our soy sauce, lime juice, peanut butter, garlic, ginger, and honey in a blender or food processor, and blend until smooth. It should pour off of a spoon slowly like syrup. if it is too thick, add a little water, or more lime juice to your tastes
set the sauce aside, and add your carrots to the food processor.
chop your carrots until they are minced. You want them to blend into your burgers as much as possible, especially if you are trying to hide them from picky eaters 😉
Next, Combine in a bowl your turkey, broccoli, carrots, cilantro and half the sauce.
Mix it well! I use my hands 🙂
Form the turkey mixture into 4-5 balls and press them onto a skillet or electric grill. (or grill pan) Avoid the BBQ If you can, they tend to fall apart on the Grill.
I use our George Foreman! It cooks them perfectly, and quickly 🙂
Top with additional sauce and some greens and serve on a bun of your choice!
We enjoyed our burgers with curried sweet potatoes. These were super easy to make!
Toss a peeled, cubed sweet potato with coconut oil, garlic, salt and pepper to taste, and about a tsp of curry powder. Roast at 400 Degrees for about 20 minutes or until fork tender.
