4 Ingredient Thai Baked Tilapia

Seriously. 4 Ingredients. I throw this bad boy together on a weekly basis! Its delicious and healthy enough to satisfy, and easy enough to replace the fast food run on those overwhelming days!

Here is what you need

  • 4 Fillets of Tilapia
  • 1 can of coconut milk
  • 1 bunch of cilantro
  • 1 Tbs chopped garlic

Thats it! I usually serve it over jasmine Rice, but you can serve it with whatever you like

First thing you need to do is prep your tilapia. If you are like me, you are less than an hour out til dinner time and you are just now rummaging through your freezer for a few frozen fillets. Rock on sister. This recipe is a great choice for you! Just place them in a cold water bath to thaw, they should be ready in about 10-15 minutes! If you are a planner, you can go ahead and thaw them in the fridge overnight, or use fresh fillets.

While your fish is thawing, you can get started on your sauce, and preheat your oven to 350 degrees.

Pour one can of coconut milk into a food processor. Add your bunch of cilantro (stalks removed) and your chopped garlic.

Blend until smooth. My chopper is cheap. I would like the cilantro to be chopped more, but…. my chopper is cheap.

So this is what mine looks like, which is fine too.

*If you don’t have a food processor,  feel free to chop your cilantro and stir it into your coconut milk with the garlic

Once your fish is thawed, pour a little sauce into a glass casserole dish. Place your fish on top, and pour the remaining sauce on top of the fish.

now simply bake at 350F for about 30 minutes, or until the fish flakes easily with a fork.
