Homemade Coconut Pineapple Pops

DSC_0062We first made these on a hot summers day back in Korea. The kids were all playing in the yard and it was one of those dreaded days the commissary wasn’t open, so running out for ice pops wasn’t going to be an option. I looked around my kitchen, and with inspiration from a few pinterest recipes, I threw together what turned out to be some of the yummiest frozen treats I’ve ever had! and *bonus* none of the artificial coloring or HFCS!

Here’s the recipe:

in a blender combine

  • 1 can coconut milk
  • 1 banana
  • half a can of crushed, or cubed pineapple (drained)  or half a cup of fresh pineapple
  • a handful of frozen or fresh raspberries, strawberries, mango or any other fruit you have on hand

pour into an ice pop mold, freeze and enjoy! I know we did 🙂
